Classic Pike à la Polonaise: Traditional Poached Fish with Buttered Egg Sauce

When it comes to historic European culinary traditions, few preparations highlight freshwater fish as elegantly as Pike à la Polonaise (Szczupak po polsku). Originating in Poland and long revered across classic French and Central European gastronomy, this iconic dish features delicate, poached pike served with a rich, velvety topping of melted butter, hard-boiled eggs, fresh parsley, and toasted breadcrumbs.

At Thompson’s Seafood, located in historic Holcombe Market, Tottenham (N17), master fishmonger James sources fine freshwater species and wild white fish straight from Billingsgate Market. Whether you are revisiting a cherished heritage recipe or exploring classic European seafood traditions, pike is a magnificent choice for home cooks seeking a firm, flavorful fish.

What Makes Pike Ideal for À la Polonaise?

Pike is a prized freshwater fish known for its clean, mild taste and remarkably firm, lean white flesh. Because it is naturally low in fat, cooking it gently in a Court-Bouillon (aromatic vegetable broth) keeps the meat incredibly moist, while the rich, butter-based Polish sauce (Salsa Polonaise) provides the perfect indulgence to balance its delicate flavor profile.

  • Firm & Lean Texture: Holds its shape beautifully during poaching without flaking apart in the pot.
  • Mild & Subtle Flavor: Absorbs subtle aromatics from bay leaves, peppercorns, and fresh herbs effortlessly.
  • Classic Polish Sauce: A comforting blend of melted butter, chopped hard-boiled eggs, toasted breadcrumbs, lemon juice, and fresh parsley that adds texture and richness.

Ingredients

For the Poached Pike:

  • 1 Whole Pike (approx. 1.2 kg – 1.5 kg, cleaned and scaled) or 4 thick Pike steaks/fillets
  • 1 Large Carrot (sliced)
  • 1 Leek or Onion (sliced)
  • 1 Stalk Celery (chopped)
  • 1 Bay leaf & a few sprigs of Fresh Parsley
  • 6 Black Peppercorns
  • 1 tbsp White Wine Vinegar or Lemon Juice
  • 1 tsp Salt
  • Water or Light Vegetable Stock (enough to submerge the fish)

For the Polish Sauce (à la Polonaise):

  • 100g Unsalted Butter
  • 2 Hard-Boiled Eggs (finely chopped)
  • 3 tbsp Fine Breadcrumbs (fresh or panko)
  • 2 tbsp Fresh Flat-Leaf Parsley (finely chopped)
  • 1 tbsp Fresh Lemon Juice
  • Salt & Cracked Black Pepper to taste

Step-by-Step Cooking Instructions

1. Prepare the Aromatic Poaching Liquid

In a large fish poacher or wide shallow pan, combine the sliced carrot, leek, celery, bay leaf, parsley sprigs, peppercorns, salt, vinegar, and water. Bring to a boil, then turn down the heat and simmer gently for 15 minutes to allow the aromatic flavors to infuse into the liquid.

2. Gently Poach the Pike

Carefully lower your prepared pike steaks or whole fish into the simmering liquid. Cover the pan and poach on very low heat for 10 to 12 minutes (or 15 to 20 minutes for a whole fish) until the flesh turns opaque and pulls away from the central bone easily. Remove the fish gently using a slotted spatula and keep warm on a heated serving platter.

3. Make the Polish Sauce (Polonaise)

Melt the butter in a saucepan over medium heat. Add the breadcrumbs and toast them for 2 to 3 minutes until they turn light golden brown and fragrant. Remove the pan from the heat, then stir in the finely chopped hard-boiled eggs, fresh parsley, and lemon juice. Season with a pinch of salt and cracked black pepper.

4. Garnish & Serve

Spoon the warm, golden buttered egg mixture generously over the top of the poached pike. Serve immediately alongside boiled new potatoes, buttered green beans, or a crisp cucumber salad.
